What is Capsaicin?

This intense burst of heat is due to Capsaicin, the pungent molecule. So intense, that it keeps all the insects and animals that try to approach it away ... Except for Kevin, of course, who loves the flavours and the impact these peppers bring to recipes.
In addition to complementing cooked meals, capsaicin is used medicinally to reduce joint pain, something our friend Kevin didn't know! The stinging molecule owes its analgesic action to the reduction of pain transmission! But beware Kevin, do not double the dose, the smoke may come out of your ears!
